Thoughts On The Election

When President Obama won, Chris, Rick, Kamasi and I were all watching. Kamasi was writing a report on the election that he had to turn in. As you know the Kendricks are very docile when it comes to celebrating. But the Bell in the house. Oh Well, I gave out a scream that my neighbors probably heard. My feeling were happiness, joy and a feeling of wanting to cry. It was one of those rare times when I was happy enough to cry. I mentioned to someone that he may be the Messiah. Well that was an overstatement. I really didn't mean that. [You all], but I felt happy for my race and the long hard struggle of my people. I have been in many situations where I was the only African American, but now I feel that I am really a part of the American Dream. I never felt it before. Thank God I saw it in my lifetime. I always say I lived in a wonderful time. I have seen the Bicentennial, the first space exploration, computers, cell phones, microwaves and now the first African American President. I would not choose a better time to live if I had the choice. [I wish Daddy had seen this day]. - Jean

I cried with joy and thanked God I was alive to see an African-American president. As I watched the reaction from the world I realized that this was much bigger than him just being black, this was HOPE. Asians cried. whites cried. Africans cried. I called my mom and said "Mommie, we lived to see a BLACK PRESIDENT!!!!!!! Then I thought about our ancestors that paved the way, died, beaten for this to be ordained. The kids in the white house are not Sally or Chelsea. It's Sasha and Malia. And our president isn't a George or Bob, it is BARACK HUSSAIN OBAMA!!!!! YEAHHHHHHHHHHHHHHHHHHHHHHHHHHHHHHHHHHHHHHH
THIS HISTORICAL MOMENT WAS ORDAINED BY GOD-meant 2 b. - Carlton

Chicken Penne and Broccoli / Perfect Turkey

WASH, SEASON AND CUT CHICKEN BREAST IN CUBES. BOIL WATER AND COOK PENNE FROM BOX DIRECTIONS, CLEAN AND CUT BROCOLLI. SAUTE CHICKEN IN PAN, LEAVE JUICES IN PAN AND ADD 1/2 CUP OF WATER, 2 TBSP BUTTER AND SOME SEASONING, ADD BROCOLLI, DRAIN PENNE AND PLACE BACK IN POT. ADD CHICKEN AND BROCCOLI AND SERVE. ADD OR TAKE OUT ANYTHING YOU WANT. PLAY WITH IT AND MAKE IT YOUR OWN.

GE's Perfect Turkey Recipe

Ingredients
1 whole turkey, thawed

Black pepper
Garlic salt
Butter (about 2 sticks)
Vegetables - Amounts may vary. Use enough to fill the inside of your turkey
Onions, cut into large chunks
Carrots, cut into large chunks
Celery, cut into large chunks
Garlic, whole cloves

Fresh rosemary (optional)
White wine (optional)
Preparation
1. Preheat oven to 325 degrees F.

2. Remove giblets from the turkey's cavity. Wash turkey well in cold water and allow water to drain from turkey for several minutes. Place breast-side up turkey on a roasting rack in a roasting pan. If the turkey is not too large, you can use a broiler pan and rack.

3. Season the inside cavity of the turkey well with black pepper and garlic salt. Stuff the cavity with chunks of butter, cut onions, cloves of garlic, celery and carrots. If you have some fresh rosemary, this can be added too and gives a great flavor and smell. You can also add a few tablespoons of some white wine into the cavity for added zest!

4. Melt a stick of butter and brush all over the turkey's exterior. Season well with garlic salt and pepper.

5. Take small pieces of foil and wrap around the wing and leg tips. This will keeps these from charring before the rest of the turkey is done. Do not cover the rest of the turkey. No need to baste; the turkey self-baste.

6. Place turkey in oven and bake until internal temperatures reach 180 - 185 degrees F. The time will vary with your oven and the size of your turkey, but a general rule is approximately 15 minutes per pound for a conventional oven. Refer to your owner's manual or a cookbook to be sure.

7. Remove the foil wraps around wings and legs the last hour or so of roasting.
